
Tonight for dinner I tried out a new technique (for me at least) for cooking chicken breasts. I marinated them in extra virgin olive oil, lemon juice, garlic and herbs (rosemary and oregano). They are fried for 2 minutes on each side in a nonstick frypan, and finished off in a 180oC oven for 6-8 minutes. The result is quite juicy and flavorful. I would like to experiment with some different marinades.
I had the oven already on to bake pumpkin wedges (winter squash) so I simply added the chicken at the end. Served with steamed broccoli and tomatoes in a olive oil/balsamic vinegar dressing (which also served as a tasty sauce for the chicken).
