Family potluck dinner


We had extended family over for a potluck dinner on Saturday. I can only take credit for the the penne pasta with eggplant, red capsicum and basil sauce. Cousin Louise made a delicious lasagne. Cousin Sue is a master salad maker; she brought a fresh salad with raw beetroot and radishes and lettuce, and another with spinach, sweet potatoes, feta cheese and sunflower seeds. DH made a chocolate cake (I like this new tradition that he bakes cakes!) Aunt Jo brought bread and ice cream and a fruit salad, oh and her thumb, shown in the picture.

OH, I adore a good potluck!!! My fav parties to host are potlucks...I always end up with such a fantastic mix of foods and not only is it easy to prep for ~but clean up is so much easier! :oP

When I have a large potluck I do not even assign dishes I just provide the main dish and a couple of apps and ask everyone to bring a side or a dessert of thier choice. Somehow it always works out perfectly. The first time I did this I was nervous that we would end up with too many desserts or a ton of mac-n-cheese.. But I was pleasantly surprised with a beuatiful array of sides, salads and just the right amount of dessert :oD

BTW, by large I mean about 8-10 families/couples/friends...
